Wine-Cellar Tasting & Pairing Dinner

A wine-cellar dinner in the Maldives is a separate, reservation-only evening built around a resort's actual cellar rather than its restaurant list — a small table, a sommelier or resident "Wine Guru," and a tasting menu paired bottle by bottle. Conrad Maldives Rangali's Wine Cellar sets the benchmark: two metres underground, more than 15,000 bottles, candlelit multi-course degustation dinners rather than a walk-in tasting.

The format varies more than the name suggests. Some cellars are genuinely subterranean — Huvafen Fushi's Vinum, billed as the Maldives' first underground wine cellar, runs six-course dinners beneath suspended art installations, while JA Manafaru's The Cellar claims the country's first, and reportedly still deepest, wine cave. Others sit at or below the waterline: Anantara Kihavah's SEA is the world's first underwater wine cellar, and Six Senses Laamu's Altitude holds its tastings inside a spun-glass tower rising 6.4 metres above the ocean. Scale swings widely too — Constance Halaveli's Jahaz and Jing cellars together hold over 22,500 bottles across 1,600 references, well beyond a single restaurant list.

These rooms seat a handful of guests, so dinners are booked ahead rather than walked into, and a few resorts run them on a set night — Hurawalhi, whose over-water cellar at Kashibo holds 336-plus labels curated by the resort sommelier, also runs a weekly Wine Dinner. Where a resort runs all-inclusive, the cellar is usually carved out on its own: Constance Moofushi folds 125-plus references into the all-inclusive tier but keeps 700-plus premium labels as a paid supplement, a split worth asking about before you book.

Hurawalhi's over-water cellar at Kashibo runs its Wine Dinner weekly rather than nightly — worth checking the schedule before you build an evening around it.

Which Maldives resorts have a real wine cellar, not just a wine list?

A genuine cellar experience — a dedicated room with a sommelier and a tasting menu built around it — is different from a restaurant simply carrying a wine list, and around thirty of the resorts we work with have one. Conrad Maldives Rangali's Wine Cellar (15,000+ bottles, two metres underground) and Constance Halaveli's combined Jahaz and Jing cellars (22,500+ bottles) are the largest by volume; Anantara Kihavah's SEA and Huvafen Fushi's Vinum are notable for being the first underwater and first underground cellars in the country respectively. How do I book a wine-cellar dinner?

These are reservation-only settings with limited seating — a handful of tables at most, sometimes as few as twelve seats, as at Anantara Kihavah's SEA and Sun Siyam Iru Fushi's The Cellar — so they're booked ahead rather than walked into once you're on island. A few resorts run theirs on a fixed schedule instead of open booking, like Hurawalhi's weekly Wine Dinner. Is a wine-cellar dinner included in an all-inclusive plan?

It depends on the resort and the label. Constance Moofushi includes 125-plus references in its all-inclusive package and treats a further 700-plus premium labels as a paid supplement, which is the clearest example we have of how resorts typically split it — house selections included, rarer bottles charged separately. Where a resort doesn't spell this out, we check before you book so there's no surprise at the table.

What does a wine-cellar dinner actually involve?

Most are structured as a chef's tasting or degustation menu paired course by course with wines chosen by a sommelier or, at the Anantara properties, a resident "Wine Guru" — closer to a curated evening than an à la carte dinner. Some rooms lean into the setting itself: Velaa Private Island's Tavaru pairs tower teppanyaki with what it calls the Maldives' largest private wine cellar, and Halcyon Private Isles' Wine Room seats up to twelve with both a chef and a sommelier present.
