Teppanyaki Dining

Teppanyaki dining in the Maldives means the Japanese hot-plate format done properly — a chef working a flat iron griddle in front of a small group of diners, cooking beef, seafood and vegetables to order with some knife-work theatre built in. It's a common specialty-dining format across the resort islands, usually its own dedicated restaurant rather than a corner of a bigger menu, and often capped at a dozen or fewer covers a sitting so the show stays intimate.

The staging varies more than the format does. Conrad Maldives Rangali Island's Koko Grill runs the griddle in the open air above the sand and sea, plating miso soup with Maldivian lobster alongside Japanese Wagyu beef tenderloin. Soneva Fushi's So Bespoke keeps it simpler — an open iron griddle, one of several show-kitchen concepts on the island. Velaa Private Island goes the other way with Tavaru, a tower built specifically for teppanyaki theatre, set beside the resort's own wine cellar. At Six Senses Laamu, Kaji serves the format across four set menus rather than an open à la carte.

Seats are genuinely limited at most of these restaurants — Diamonds Athuruga's teppanyaki hut tops out at twelve covers, Sun Siyam Olhuveli's adults-only venue seats eight — so it's worth naming the night you want rather than assuming a table opens up on arrival. dusitD2 Feydhoo is the exception, folding a teppanyaki dinner into its All-Inclusive plan once every four nights; elsewhere it's a paid specialty extra.

Is teppanyaki dining included in the room plan?
